Chef Patrick Bardoulet

Patrick BardouletPatrick Bardoulet joined Cringletie House Hotel in 2011 to take the kitchen and team in a new direction. Patrick began his culinary career at the age of 16 at the former Rothschild Residence, Le Chateau Montvillargennes, Chantilly. His career, marked by a committed and competitive nature, has culminated in the award of 3 AA Rosettes within 9 months.

Patrick’s work began as Sous Chef in well recognised 2 AA Rosette Hotel Restaurants such as Combe House Hotel, to the prestigious 2 AA Rosette Roxburgh Hotel and 3 AA Rosette Alexander House.

Patrick then took on the challenge of the position of Head Chef of Jedforest Hotel, achieving 2AA Rosette's within 4 months. Following this success Patrick moved on to Windermere to the Michelin star Holbeck Gill as Sous Chef. Patrick's work has been varied including working alongside celebrity TV chef Mortens Kro and as Executive Head Chef in the exclusive 5 star Annabelle Hotel in Paphos.

However his heart belonged to Scotland and Patrick returned to the Scottish Borders where he opened Bardoulet's Restaurant at The Horseshoe Inn in 2005.

With a love of fresh Scottish produce, Patrick works with raw ingredients to produce inventive dishes in a French Classical style with a modern twist. Deriving satisfaction and motivation from his customer's enjoyment, Patrick is continuing to build on his previous successes at Cringletie House Hotel.
